Vietnamese Banana Ice Cream (or "Kem Chuoi") is a favorite desert for many Vietnamese. Although it is called ice cream, no dairy product is used. Nothing can be compared to an ice-cold Kem Chuoi bar on a summer day. The combination of amazing flavors and interesting textures is irresistible.
The ingredients are incredibly simple: ripe banana, coconut cream, roasted peanut, and fresh shredded coconut, which is optional. Not any kind of banana will work for this, but it must be fully ripe Vietnamese banana (or "Chuoi Su") which has rich vanilla like flavor and gummy texture. So when the banana is flattened, it can still hold its shape and texture.
Chuoi Su can be found at most Asian grocery stores, but it is available only during summer. Both Kimmy and I dearly love this desert, but it is hard to be found at where we live. So, as usual we must role up our sleeves and make it by ourselves, which is pretty easy and fun. So, homemade Kem Chuoi we go.
