Kimmy Pasta

I call it Kimmy Pasta because it is quite unique to her style. Did I tell you that Kimmy has a very specific taste? And she is very persistent on what she likes. For Kimmy, pasta must go with crumbled ground beef - no meat ball, and absolutely no pork or poultry, and tomato must be cooked until it melts into rich sauce. But after all, it is delicious. This is an all-year-round dish, and I especially love having it on rainy days.

First thing is to boil the pasta because these guys take a while to be well cooked. Then stir fry ground beef with white onion, garlic, and shallot until slightly brown and fragrant.



Stir fry diced tomato with white onion and garlic on high heat for 3 minutes until soften and then lower the heat to cook for 10 minutes until the juice comes out. Add the beef to tomato sauce and then follow with salt, black pepper, sugar, and fish-sauce to your taste.



Add some green onion for color contrast and to enhance the flavor. Tip is not to dice the onion but cut into 2-3 inches length, which you will find it a lot more flavorful. Turn off the heat and start to enjoy.
